Mango Chia Pudding

The 2nd recipe in my series of GET FIT…

Chia Seeds are a powerhouse of nutrients. They are rich in antioxidants, iron, magnesium, calcium & fibre. They are also a good source of omega-3 fatty acids, which in turn help to raise HDL, the good cholesterol that protects us against heart attacks. Due to their high fibre content they keep you fuller for longer and thus are one of the best alternatives for people who are looking to loose weight.

The best way to have Chia seeds is to soak them in water or any other liquid so that they have had the ability to fully expand before we eat them.

The next ingredient is Mango. Mangoes apart from being extremely delicious are packed with nutrients as well. They are rich in Vitamin C so they keep our immune system healthy. They are very good for our skin & eyes as well.

This particular recipe is extremely simple to prepare, the only thing we have to be careful about is to soak them properly, so to be safe we go for an overnight soak. I have not added any sweetener as the mangoes give it the perfect sweetness. The muesli gives the crunch. You can add a few nuts if you like- dried cranberries, almonds, walnuts all go well with it.

I like to have this pudding twice a week as its easy to prepare and keeps me fuller for longer. In the coming weeks I will be sharing many more ways for you to incorporate Chia Seeds into your diet, so stay tuned.

Mango Chia Pudding

  • Servings: 2

Ingredients

  • 1 1/2 cup Milk/ soy milk/ almond milk/ coconut milk
  • 1/4 cup Chia Seeds
  • 1 mango cut into cubes
  • 2 tbsp muesli

How to make it

  1. Mix the milk & chia seeds in a large bowl. Cover & let it soak overnight in the refrigerator.
  2. Next morning, the Chia Seeds swell up and become like a jelly. Give it a good stir to break any lumps.
  3. Divide into 2 bowls.
  4. Top with mango cubes & muesli. Serve immediately.
