On our recent trip to McLeodganj we went to this beautiful small cafe for breakfast and the chef advised us to try their veggie Frittata… and it was lovely!

We came back and one Sunday my husband asked me to re-create the dish! I made my version of the Frittata and it turned out just as great!

Perfect for family Breakfast to share the great pie!

Veggie Frittata

  • 4 whole eggs
  • 1 chopped onion
  • 1 tsp minced garlic
  • 1 chopped tomato
  • 1/2 chopped capsicum
  • 1/3 cup chopped spinach
  • 4 tbsp oil
  • 1 tsp red chilli flakes
  • Salt to taste
  • Mozzarella cheese

How its made

  1. Heat 2 tbsp oil and add the onions and garlic, sauté for 1 minute
  2. Whisk 4 eggs with salt and chilli flakes. Add the chopped veggies and onions
  3. Heat an ovenproof pan and add 2 tbsp oil. Add the egg mix and cook covered on slow flame for 1-2 minutes.
  4. Top with cheese and bake at 180 C for 7-8 minutes.
  5. Serve Immediately!
