Corn season is here…. Nothing better than digging into a bowl full of comforting Sweet Corn Soup…

There is just something about this soup that gives such great comfort… A sense of well-being, of being secure! Probbably cause it was our fav soup while growing up! Either ways… Its a fairly simple soup… Which can be made with 3 variations… 1)Veg 2)Egg 3)Chicken.

Each version as simple as the other.

So go out, grab a fresh cob of corn and make this beautiful luscious soup and enjoy in this gloomy monsoon weather… 

Sweet Corn Soup

  • 1 cob of fresh Corn
  • 3 cups water
  • 1/2 tsp cornstarch
  • 1 green chilli finely chopped
  • Juice of half lemon
  • 1 tsp soy sauce
  • Salt to taste

For veg soup- 2-3 tsp of finely chopped carrots, capsicum and French beans

For egg soup- 1 whole egg

For Chicken Soup- 2 tsp of sauted chicken cubes

How to make it

  1.  Peel the corn cob and grate 2/3 of the cob into a pan. Peel while corn kernels from the remaining 1/3 cob.
  2. Add the 3 cups of water, cornstarch and salt and bring to a boil. Let it simmer for 10 minutes.
  3. Add the soy sauce, lemon juice and green chillies.
  4. Bring to a boil and serve hot.

For the veg version-

  • Saute the veggies in 1 tsp of oil and add to the soup once it comes to a boil in step 2.

For the Egg version-

  • Whisk the egg and pour into the soup in a thin string while gently stirring the soup in step 3.

For the Chicken Version-

  • Add the chicken pieces in step 2.
