The all time favourite and an absolute comfort food for me and my sis is the good ol’ Mac n Cheese! Its super yumm….easy to cook and has that comfort in every spoonful!
Its my “goto” dish, and possibly the one dish that I frequent the most!
Everyone from my cousins to my mom to my friends absolutely loves this simple pasta dish!
Its got three elements to it… But when done simultaneously it takes just 30 minutes for the dish to go onto your plate!
This sunday make this super yum n guilty ( read lots of cheese) pasta in dinner! You will love it….

White sauce – 2 cups
1/2 cup. Cheddar cheese
2 tsp. butter
1 tsp. oil
2 tsp finely chopped garlic
1/4 tsp oregano
1/4 tsp basil
1 onion sliced
Salt to taste
Red chilli powder to taste
200 gms. Macaroni elbows
How to make it
Melt the butter and oil in a wide non stick pan. Add the onions and sauté on medium flame till golden brown. Add in oregano, basil and the red chilli powder.
Cook the macaroni as instructed on the pack and keep side. (Add a teaspoon of oil in the water to avoid sticky macaroni, and do not overcook the macaroni) the macaroni should be left slightly uncooked( al dente)
The white sauce needed in this dish needs a little bit of tweaking from its version i explained earlier! When you heat the oil and butter, add in the garlic just before you add in the flour, sauté for about 30 seconds and then proceed as mentioned in the recipe! allow it to simmer for 10 minutes and then add in the cheese and salt ,mix well till the cheese dissolves!
Now mix the cheesy white sauce and sautéed onions together!
Add to the macaroni, toss well and transfer to an oven proof dish and bake at 180° C for 10 minutes!
To add a slight crunch to it, you can give it an optional topping of crumbs.
To make the crumbs.. You will need
1 cup bread crumbs
1/3 cup grated parmesan cheese (i do use cheddar at times)
1 tbsp butter
Heat the butter, add in the crumbs and the cheese, toss around till its slightly golden in colour and sprinkle it on the macaroni and bake as usual!
