When it comes to chocolates I believe Ferrero Rochers® are the King among all chocolates! I mean seriously…what can be better? They have the perfect crunchy nutty outer layer…beneath that the crispy wafer…and beyond that a beautiful whole hazelnut enveloped by a luscious velvety chocolate cream! Its an absolute wonder!
What can be better??
What about a rich brownie and in its heart a beautiful whole Ferrero…topped with a rich salted caramel butter cream?
I know you are salivating, cause I sure am…as I’m writing ..as I can recollect the flavour! Its like heaven on earth!
And nothing beats the surprised look on the faces of those who are served this delectable beauty..when they bite into it..they go…OMG!
So take some time and bake this absolutely gorgeous dessert! If there is one thing you want to try this weekend let it be THIS!

for the brownie bites
100 ml oil
175 ml water
1 cup sugar
1 cup flour
4 tbsp cocoa powder
1/2 tsp baking powder
1/3 tsp salt
1/3 cup chopped dark chocolate( semi-sweet)
9 Ferrero Rochers

for the caramel butter cream
1 cup unsweetenedButter cream
1/3 can condensed milk
1 tbsp cream
1/2 tsp salt

How to make it
The brownie bites
In a saucepan bring to a boil the sugar and water. Take it off the flame once it boils and add in the chocolate. Let it sit for 2-3 minutes, give it a stir and mix well so that all of the chocolate dissolves smoothly. You will get a shiny liquid. Keep aside to cool.
In a large mixing bowl, mix together all the dry ingredients. Add in the oil as well as the chocolate liquid and mix well using a spatula. DO NOT OVERMIX.
Line a cupcake tray with cupcake liners and pour the batter into the tray so that each cupcake mould is 2/3 full.

Bake in a preheated oven at 180°C for 10-12 minutes or until a skewer inserted in the middle comes out clean!
Let the brownie bites sit in the trays for 2-3 minutes when you take them out of the oven.

Now carefully insert one Ferrero Rocher into each brownie bite, while its still warm( keep the bites inside the tray so that they don’t loose their shape).


Now transfer the bites onto a wire rack and let the bites cool.

The caramel Butter cream
In a heavy bottomed pan bring to boil the condensed milk on low flame! Keep stirring! You need to be PATIENT! It takes time! Once the condensed milk starts to turn golden brown add in the cream and salt and simmer for another 2-4 minutes. You should now have a rich caramel!

Add this caramel to your (unsweetened) Butter Cream, and whip well with a bloom whisk. Pour into a piping bag and keep aside!

To serve
Once the brownie bites are cooled, peel the cupcake liners!
Pipe your Caramel Butter cream on the bites ( I used a star nozzle). Voilá… Bon Appétit!
