My little cousin brother demanded a batch of cupcakes to take to school one day. when asked what flavor he wants, he asked for the available options. he then analysed them, and literally directed me to make cupcakes which are half banana-half chocolate and best part of…a cherry on the top! I had to make a trip to the market especially to get the cherries for these beauties. There nothing fancy about them, but have the absolutely yum combination of banana-chocolate on them, that just set them above any ordinary marble cupcakes. and the best part of all…my lil bro loved them!
1/4 cup butter/ malai(heavy cream)
1/2 cup powdered sugar
1. Cup all purpose flour
1 cup milk
1/2 tsp baking powder
1/4 tsp baking soda
Salt a pinch( it adds to the flavor, do not omit!)
1 tbsp Cocoa powder
1 ripe banana
1/2 cup seedless tinned cherries
How to make it
In a large bowl mix together the butter and sugar. Whisk with a bloom whisk,till it forms a blob! Add in 1/6 cup of milk and whisk again. Once it thickens add in 1/6 cup of milk,and whisk again, repeat this step again (use only half cup milk for this process). divide the mix into two.
Banana cake mix
Mash the banana with a fork and add to one of the separated butter mix.
Now in a large sieve, add half of all the dry ingredients(except cocoa powder) and pass it through the sieve.
Add the dry ingredients to the butter mix along with 1/4cup milk.Mix with a spatula to incorporate all the flour into the mix. IMPORTANT do not over mix otherwise your cake wont rise.
Chocolate cake mix
to the other half of butter mix add the remaining dry ingredients and mix in the same way you mixed the banana mix.
Pour one spoon of each mix into muffin moulds lined with cupcake liners,so that each liner is 2/3rd full.
Taking a tooth pick swirl the two mix together to get a marbled effect. Add a cherry on top, press slightly into the mix.
Bake in a pre-heated oven at 180°C for 10-12 minutes or till a skewer inserted in the centre of the cupcake comes out clean.
